Root beer jerky

  • 3 cups root beer
  • 1/3 cup soy sauce
  • 1 tsp chipotle powder
  • 1 tsp paprika
  • 1 tsp granulated garlic
  • 1/4 tsp liquid hickory smoke
  • 1 lb London broil strips, or other lean beef strips
  1. Mix all ingredients except the meat into a saucepan and heat over medium-high heat. Cook until the mixture reduces by half, 15–20 minutes. Remove from heat and allow to cool completely.
  2. Pour the marinade into a 1-gallon freezer bag and add the meat strips. Mix the strips around so they get completely coated in marinade.
  3. Remove as much air as possible from the bag, seal, and refrigerate for 4 hours. Periodically remove the bag and work the meat around to fully incorporate the marinade.
  4. Remove the strips from the marinade and arrange in a single layer in a dehydrator. Dry at 158°F for 4–6 hours, or until done. The jerky should be dark and bend without snapping.
